Turkey Day Leftovers Mac & Cheese

Repurpose your Thanksgiving leftovers with this mouth-watering mac and cheese recipe!



Ingredients

    MAC & CHEESE
  • 1 (170 g) box Annie’s™ Shells & White Cheddar Macaroni & Cheese
  • 1 oz (28 g) goat cheese (about 2 tbsp/30 mL)
  • 1 1/2 (25 mL) tablespoons milk
  • 1 tablespoon (15 mL) butter
  • 1/2 cup (125 mL) leftover turkey, chopped
  • 3/4 cup (175 mL) leftover cooked green beans
  • BALSAMIC CRANBERRY SAUCE
  • 1/3 cup (75 mL) leftover cranberry sauce
  • 1/2 oz (14 g) goat cheese (about 1 tbsp/15 mL)
  • 1 ½ teaspoons (7 mL) balsamic vinegar

Directions

Make your balsamic cranberry sauce by stirring together cranberry sauce, goat cheese and balsamic vinegar. Set aside. In a saucepan, bring water to a boil. Cook shells for 8-10 minutes. Drain pasta through a colander and set aside. Whisk together goat cheese, milk, and butter into the warm pan used to boil pasta. Sprinkle cheese packet over the top and stir until cheese sauce is smooth. Add cooked pasta to cheese sauce and stir until all pasta is coated. Stir in turkey and leftover green beans. Serve topped with balsamic cranberry sauce.
